Chef Hamamoto sources premium seafood daily from Tokyo’s Toyosu Market, aging and preparing each ingredient to enhance umami. His red-vinegar rice is a hallmark, balancing acidity and warmth to complement the neta. He believes sushi is a craft of precision, where every grain of rice matters.
Signature Experience
The omakase journey begins with delicate appetizers before a progression of flawless nigiri. Highlights include silky otoro (fatty tuna) that melts on the tongue, and Hokkaido uni served atop a crisp nori cone. Each piece is seasoned with a brush of nikiri soy sauce, eliminating the need for extra dip.
