Located in a historic Japanese-style house in Victory Star Village, Pingtung, Le Gaulois is one of the few French restaurants in the area. Inherited from former Grand Hotel executive chef Jean-Louis Mermet, it has been operating for over 20 years and moved to its current location in 2021.

Serving authentic bistro-style French cuisine, signature dishes include ribeye steak with herb butter red wine sauce, crème brûlée, pan-seared fish fillet, and handmade bread, desserts, and chocolates. All ingredients are made from scratch.
